The Enemy Skill Materia in Final Fantasy 7 Remake, is used to steal abilities from enemies in the world to be used against them. In the original Final Fantasy 7, the Enemy Skill Materia had tons of abilities and enemies to learn them from. In Final Fantasy 7 Remake, the Enemy Skill Materia is much more limited.
There's only one Enemy Skill Materia, which means only one character can equip it at one time. To get it, you'll need to complete Chadley's Intel Battle Report #18. There are also only four monsters who you can learn enemy skills from in FF7 Remake, and every one of these potential skills is an offensive one.
To learn an enemy skill in Final Fantasy 7 Remake, you need to get the enemy to use a specific skill while having the Enemy Skill Materia equipped. Be mindful that only the character with the Materia can get the ability, so it's best to equip it on the main character being used and not the other two.
It helps to have completed the game already, so you can use the Chapter Select to revisit the locations of some of the enemies. Finally, getting all four of the enemy skills will earn you the elusive "Master of Mimicry" achievement / trophy.

Algid Aura is similar to having an Ice Materia linked with an Element Materia, imbuing the equipped weapon with Ice damage. The Algid Aura has an additional effect of creating an Ice Aura around the player. This will damage enemies, but it will damage your characters, too!
To get this ability, get a Cerulean Drake to cast Icy Aura. The Cerulean Drakes can be found in a few locations throughout the game: at the Sector 7 Slums, in the Train Graveyard, and in the Collapsed Sector 7 Plate.

The Spirit Siphon will draw HP from surrounding enemies, then restore the same amount in the character using the skill. This is a great way to damage enemies while healing yourself without having to sacrifice extra MP on heals. Keep in mind that, like all heals, using the Spirit Siphon on undead enemies will heal them and hurt the player!
To get the Spirit Siphon, you have to fight Phantoms and wait for them to use the skill Essense Drain. The best place to find Phantoms is during the "Missing Children" quest in chapter 14. You can also find them in the Shinra Combat Simulator when going against SOLDIER Trainees.

The Self-Destruct ability is used as a last-ditch effort to finish off an opponent in the spirit of self-sacrifice. Just make sure you have the Revive Materia equipped on someone else in the party so you can bring the character back right away.
The ability deals out a huge amount of Magic damage to nearby enemies and brings up the user's limit break. It also, as the name implies, causes the user to immediately die.
You can gain this ability from the Smogger enemy when it uses the Apoptosis skill. Smoggers can be found in the Sector 5 Slums, and at the Collapsed Expressway. Or, you can just fight it in the vs. Team Ragbag Shinra Combat Simulator battle.

Bad Breath is a triple threat that deals out Sleep, Silence, and Poison to all enemies. (It does not, sadly, inflict Toad like the Malboro's version does.)
This is a tough ability to get, since it requires you to defeat a Malboro. The only way to fight a Malboro is by going up against the second to last mission in the Shina Combat Simulator, and one of toughest to beat: vs. Monsters of Legend. Capture the Malboro's Bad Breath skill with your Enemy Skill Materia to make you an unstoppable force in Final Fantasy 7 Remake.
